Practical notes
Prepare six small dishes, two clean bowls, a whisk and a flexible spatula. Keep the chocolate fluid but no longer hot before adding the yolks. Portion without pressing the air out. The three-hour chilling time is included in the 200-minute total. Chilling does not cook the raw eggs; use a different cooked-egg or egg-free recipe when needed.
