Practical notes
This vegetable ramen is a simplified home version using vegetable broth, ginger and soy sauce. It does not describe every Japanese ramen style or long-simmered broth. Cook noodles separately and assemble four bowls at serving time so they do not absorb the broth while waiting. The optional egg can be omitted, but also check the noodles' ingredients. Taste stock before adding the full soy sauce quantity.
